Blueberry Pancake Morning

My vegan cookbook collection is starting to push its way beyond the one book shelf I designated for it to live. Forget classical literature, cookbooks are my new passion. Often times, I find myself flipping through the pages of each cookbook I own, looking for that perfect recipe that I want to try. My decision on what to make frequently depends on what I already have in my refrigerator and pantry.

Last night I have decided that today will be a Blueberry Sunday Morning. Isn’t that cheery? So this morning I made dreamy Blueberry Pancakes from The Gentle Chef Cookbook with blueberry sauce. I made the blueberry sauce by simmering a cup of frozen blueberries, one cinnamon stick and half a teaspoon of organic sugar. It took about 15 minutes to make the entire meal.
